Molecular gastronomy is a branch of food science related to the chemical and physical changes during the cooking process. In this event, students learned about the changes and reactions involved in molecular gastronomy. They were given hands-on experience to create dishes by using sodium alginate and calcium lactate. A competition was also conducted to choose the best design of dishes.
